Thanksgiving is over and now you’ve got a ton of turkey
leftover. So how do you store this turkey and what do you do with it? I mean,
you can only have so many turkey sandwiches right?
The most important thing to remember when storing your
unfinished turkey is to remove it from the bone. DO NOT store the carcass in
the fridge or you’ll be the new owner of the bacteria breeding grounds. Slice
the meat off of the carcass and wrap it in foil, then place it in a Ziploc bag.
You can put this into the freezer and pull it out in a couple of weeks for
dinner.
Another thing you can do is search the web for some new and
exciting recipes. Terry, my husband, made turkey ala king one year and I loved
it. Another year we had turkey tettrazini, but my favorite will always be the
traditional turkey sandwich. At least it’s my form of a traditional turkey
sandwich.
I’m going to share with you one of
my favorite sandwiches that I made for my family about six years ago. My oldest
son loved it so much he began to cry (of course he cries whenever he sees
homemade cranberry sauce…don’t ask me why). Dice your turkey into chunks, dice
up an apple, mince some celery and onions and mix it all together with some
mayo. If you’re a nut fan then go ahead and add some of those too. Next you’re
going to warm up your leftover stuffing. Then you’re going to place the turkey
salad, warm stuffing and homemade cranberry sauce onto multigrain bread and
serve with a side of warm turkey gravy. I know it sounds weird, but it’s a
great sandwich. If you’re not feeling adventurous enough to put the stuffing on
your sandwich then omit it and the gravy and put a piece of white cheese on
your bread instead.
Fresh cranberry sauce can really
add something special to your leftover turkey so enjoy it while the cranberries
are in season.
