After a few months of stocks and sauces, I have finally
finished that portion of my studies and have taken my exam. This is also the
first exam that was quite clear and didn’t leave me guessing or making
assumptions. Hopefully the rest of my exams will be the same.
Since it has taken me so long to get through this portion of
my studies, I will admit I had to go back through the chapters and refresh my
memory quite a bit. It’s not easy to remember words like fumet and their
meaning when you’re not using it on a daily basis.
While going through the stocks and sauces chapters I was
told to read over the assignments, but not to complete them until the very end
in which case I will be doing the final assignment, preparing Pork Medallions
in Winter Fruit Sauce. There were four previous assignments, and I did complete
some of them because I wanted to know how to do them prior to my making the
recipe for the pork medallions. Now it’s time for the final assignment, number
five. My only question is why it’s in the soup chapter when it’s not a soup. As
a matter of fact, I completed my chapter’s exam before completing the final
assignment. Since I cannot cook right now due to foot surgery, I’ll have to put
completing this recipe off until next week, but I’ll let you know how it turns
out.
Oh and my test score was 85. I’m a little disappointed with
that, but on the bright side I only got three wrong.
