As a mother of two, life is quite busy. My oldest son is a
senior in high school, but my younger son is home schooled by me and he’s in
the 7th grade. Taking on the responsibility of educating my son
keeps me on my toes.
My household is constantly buzzing with my kid’s friends,
and with three pets. Let’s just say
there are times I feel like I’m living in a zoo. Our puppy has a habit of
waking me up at night because she’s hungry or needs to go outside. It’s like
having an infant in my home again.
On top of being a domestic goddess, I am a diabetic with neuropathy
in both feet and a few years ago I fell down a flight of stairs which ended
life as I knew it. I broke my tailbone, and caused some serious injuries to my
wrists, ankles…my whole body. I’ve had several surgeries on my right hand (yes
I’m right handed) but there’s nothing that can be done about my tailbone. Back
pain, foot pain and exhaustion are a daily thing for me. I can no longer work,
do laundry, scrub my tub, mop my floor… fill in the blank. Life had a new
challenge for me and now I had to figure out how to face it.
Over the years my family has adjusted to my limitations, but
the one thing I could never give up was cooking. I’m the kind of cook that
doesn’t measure, set a timer or follow recipes. Everything I make with the
exception of some baked goods is by taste.
During the holidays I would make candies, cookies, breads
and all sorts of treats for my family, friends and my husband’s co-workers.
Many people told me that I should be selling those items so last year I started
to do just that. Holiday platters were being sold to
everyone I once gave my treats to for free. Shortly after that I met a
wonderful woman in a grocery store, Faith, and we found that we both shared the
love of cooking and baking. It was then that we decided to start our catering
business.
Although I have years of restaurant and banquet experience,
I knew if our catering business was going to be a success I would have to
further my education, so the hunt for a school began.
Needless to say, taking on yet another responsibility like
this catering course was a difficult decision. Could I complete the course with
everything else going on in my life? Can I afford it? Where will I find the
time? I guess that’s why I chose Penn Foster. They had a very low down payment
and quite reasonable monthly payments. There’s also the whole doing-it-on-my-own-time
thing that attracted me. All the other schools I looked at required me to go
there at a specific time and that just isn’t realistic in my life. Furthering
my education at home was the only option for me.
So now my journey begins. During the next 6 months I will be
exploring the world of catering and sharing my experiences with you, the
